Why Most Coffee Tastes Burnt, and the Roasting Method That Fixes It

Most coffee is roasted against hot metal. A six-generation coffee family in Texas roasts on air instead, and you can taste the difference in the first sip.

If you take your coffee with a splash of cream "to take the edge off," this is for you.

That edge (the bitter, slightly smoky finish most people think is just what coffee tastes like) usually isn't the bean. It's the roast.

Here's what's actually going on, and the simple switch thousands of home brewers never think to make.

What Happens Inside a Drum Roaster

Most roasters use a drum: a rotating metal barrel that tumbles beans against a hot surface for the entire roast.

Every time a bean lands on that metal, it scorches a little. Do that for fifteen minutes and you get uneven roasting, smoky notes and bitterness, which is why so much coffee needs cream and sugar to be enjoyable.

Roasting on Air Instead

House of Franks roasts on air. Instead of tumbling the beans on metal, it suspends every bean in a controlled tornado of clean hot air.

When a bean brushes the chamber wall, the airstream lifts it straight back up. Contact is fleeting, so scorching is all but gone, and every bean roasts evenly on every side.

The result: a cleaner, brighter cup. Fruit, chocolate and floral notes come through instead of getting lost in the smoke.

Six Generations of the Person Who Had the Coffee Ready

Frank I, Frank II, Frank III, Frank IV, Frank V, and now Frank VI. In this family, one person was always up before the sun with the fire going and the coffee ready.

That's Frank V up front and Frank VI right behind him, on the trail at Philmont in 2024.

On camping trips that was Frank V: first one awake, coffee in hand, the whole camp running because of it. The Scoutmaster Roast is the coffee he brought on every trip.

Today every Frank's Roast uses 100% USDA Certified Organic beans, is roasted to order, and comes out of a roastery that makes all of its own energy onsite from renewables.
